Sticky Chocolate Cake

Serves 8

INGREDIENTS

100g unsalted butter plus extra for greasing

2 eggs

200g caster sugar

1 tsp vanilla extract

150g plain flour

3 tbsp cocoa powder

To Serve

With vanilla ice cream or single cream.

METHOD

  1. Pre-heat oven 180C
  2. Melt butter and leave to cool slightly
  3. Place eggs sugar and vanilla in a bowl and mix until light and fluffy approx 3-4 minutes.
  4. Add the flour and cocoa powder.
  5. Add the butter.
  6. Pour mixture into a greased tin and bake for 20 minutes.

Note – Do not over cook, the centre of the cake should be slightly gooey. as it will firm up more as it cools.

To add a bit of texture you can add some chopped nuts such as hazelnuts or almonds, after you added the cocoa powder.
